    The shop name comes from kichiji, so order the kinki with its skin blistered over flame. Eight seats behind Maruyama Class, and the whole thing runs to about 36,000 yen. Closed Mondays.

    Shimamiya opened this in 1971 and it still sets the local standard. Ask for the hokkigai, seared just enough to sweeten it. Two closed days, Tuesday and Wednesday, catch people out.

    Moved out of Susukino to a quiet residential block, so allow time to find it. The botan ebi with its prawn miso and eggs piled on is the chef's own registered design. Shut Wednesdays.

    Down an alley off Minami 4-jo, with Edomae groundwork under the chef's own ideas. The murasaki uni is the grade Toyosu buyers fight over. Two sittings only, and Wednesday is the closed day.

    The chef came out of Sushizen, so the Edomae work is orthodox even when the fish is Hokkaido's. Order the otoro zuke. Eight seats along a cypress counter, and Sunday it is shut.

    Ikawa runs the basement single handed. His squid, seared with a soldering iron, is the piece that made the shop. Four or five seats, closed Sundays, and the booking is the hard part.

    Out at Nango 7-chome, a subway ride from the centre, which is why seven seats here are gettable. Ando blends three vinegars for his rice. Mondays closed, and dinner starts at six sharp.

    Book two days ahead for lunch, which is the cheaper way in. The kazunoko, sun dried then steeped for a week, is the house piece. Perfume is not welcome, and Sundays are out.

    Conveyor sushi on the sixth floor of the station building, and the hokkigai and uni hold up. No bookings: take a ticket from the machine and expect a long wait at meal times.

    An old shop east of the Sosei river, fifty odd seats, none of the counter tension. Lunch sets stay under 8,000 yen, so come at midday. Sundays closed, and the kitchen stops around eight.
